Penne Pasta with Salmon & Mushrooms

Ingredients
- 4oz Grated Cheddar Cheese
- 4oz Mushrooms
- 2 Seafresh Salmon Fillets
- 1 pint of Bechamel Sauce
- 600g of Penne Pasta
- Chopped parsley
- Olive Oil
Instructions
Place the pasta in a saucepan cover with boiling water and cook as per instructions on the packet. Gently poach the salmon fillets in water for 15 - 20 mins. When both the pasta and the salmon are cooked, drain and leave to one side. Gently fry the mushrooms in a little olive oil without colouring them. Add the bechamel sauce, the grated cheese and seasoning stirring continuously. Now add the pasta and stir into the sauce. Flake the salmon fillets into small bite size pieces. Add to the pasta, stir in gently. Serve in warm bowls finish off with chopped parsley!
