Halibut or Cod Provencale

Ingredients

  • Fresh Basil leaves
  • Salt, black pepper, teaspoon of sugar
  • 1/2 cup of Rose wine
  • 2 tablespoons of melted butter
  • 1 medium sized Onion, finely chopped
  • 3 cloves of Garlic - peeled, chopped & crushed
  • 4 Seafresh Halibut steaks/ Cod loins
  • 4 large beef tomatoes

Instructions

Place the tomatoes in a bowl and completely cover with boiling water for 10 seconds. This will enable you to peel off the skins and separate the flesh from the core and seeds. Cut the flesh into small dice (tomato concasse), place on one side and discard the rest. ( for less time use a good quality tinned tomato). Pre-heat oven to 160c, place the Halibut/Cod in a baking tray and brush with melted butter, season with freshly milled sea salt and black pepper. Place in the oven for 10-15 minutes or until cooked to your liking. At the same time heat the olive oil in a pan, add the onions and garlic until soft and translucent. Add the tomatoes and season with melted butter, season with freshly milled sea salt and black pepper, also sugar (the sugar will help to caramelise the tomatoes and bring out the flavours). Then add the wine and reduce by half. Tear the fresh basil leaves and gently stir them into the sauce. Serve the Halibut/Cod on warmed plates and partially cover with the sauce. Decorate with a fresh basil leaf. * the Halibut or Cod can be cooked from frozen.
