Salmon Fillets with a Delicious Herb Crust

Ingredients

  • 1 Teaspoon of Lemon Juice
  • 1 Teaspoon of Garlic
  • 2 Table spoons of Chives roughtly chopped
  • 2 Table spoons of Parsley roughly chopped
  • 4 salmon fillets
  • salt and pepper
  • 20g/2oz wholemeal breadcrumbs
  • 6 - 8 floz of water (or white wine)

Instructions

Make sure the Salmon Fillets are totally defrosted. Mix the breadcrumbs with seasoning and put the lemon juice over the Salmon. Spread the breadcrumb mixture on top of the Salmon Fillets. (The lemon juice will help it to stick). Place in an oven proof dishwith a little water. (This can be substituted with white wine if you prefer) Bake in pre-heated oven 170 C or Gas mark 5 for approximately 20 minutes.
